Try sprinkling over oven baked fries or potatoes to add more flavor. Combine sausage, rice, veggies, & cajun seasoning to make jambalaya. To blacken catfish simply oil sheet pan, cover with cajun blackened seasoning, bake until catfish is done. Simply flip the catfish over when done and seasoning will coat the top as well.
